Sweet and Sour Meatballs
1 cup bread crumbs
2 lbs. ground beef
1 1/2 tsp. salt
1 garlic bud mashed
2 tbsp. Soya sauce
2 tbsp. cornstarch
1 can beef bouillon
1 can pineapple chunks
1/2 cup milk
1 egg
1/2 tsp. garlic salt or 1 tsp. garlic powder
Pepper to taste
1/2 cup sugar
1/4 cup vinegar
Soak bread in milk. Mix meat, egg, salt, pepper, garlic bud and Soya sauce. Mix in bread and milk. Form into balls, size of a quarter. Fry till done. Lift meatballs and add remaining ingredients in fry pan. Cook till thick and clear. Put meatballs back into sauce and simmer 30 minutes. Add pineapple just before serving. May be served with rice.

Easy Sour Cream Salad
1 can mandarin oranges, well drained
1 can pineapple tidbits, well drained
Add 250 ml sour cream
Add 250 ml cool whip
1 pkg. of dry orange Jello
1 cup mini marshmallows
Mix and let stand overnight, can be doubled

Wacky Cake
1 1/2 cup flour
3 tbsp. cocoa
1 tsp. baking powder
1 cup white sugar
3/4 tsp. salt
1/2 tsp. soda
1 tsp. vanilla
1 tbsp. white vinegar
1 cup lukewarm water
5 tbsp. oil
Mix together. Bake at 350 for 35 to 40 minutes

Cranberry Orange Liqueur
1 pkg. raw cranberries chopped coarsely
1 large orange
3/4 cup water
1 1/2 cup sugar
26 oz. of Vodka
Place chopped cranberries in a large jar. Peel orange with vegetable peeler (careful not to get white pith). Add orange peel to the jar. Pour in Vodka. Let sit, shaking jar occasionally for 3 weeks. Strain through cheese cloth. Boil water and sugar for 2 -3 minutes. Let cool and add to Vodka mixture. Bottle
Product will be a lovely, clear red with a sweet tangy taste.

Fast French Dressing
1 teaspoon salt
1/2 teaspoon sugar
1/4 teaspoon pepper
1 clove garlic, minced
1/2 teaspoon paprika
1/3 cup vinegar
2/3 cup salad oil
Combine all ingredients and shake well in a covered jar. Shake well before using and store in refrigerator. Makes about 1 cup of salad dressing

Waldorf Salad
1 cup diced apple
1 cup diced celery
1/2 cup broken walnut pieces
Lettuce leaves
French Dressing
Mayo
Directions: Combine the apples, celery and nuts with french dressing and serve on lettuce leaves with mayo.

Coke Salad
1 package cherry Jello
1 can Bing cherries
1 small can crushed pineapple
1/2 cup nuts
1 package cream cheese
1 cup cherry juice
Dissolve Jello in 1 cup hot cherry juice. Add 3/4 cup Coke. Cool.
When Jello starts to set, add the pineapple, cherries, nuts and cheese broken into bits. Turn into mold and chill.

Refreshing Strawberry Juice
Fresh Whole Strawberries: 2 cups
Sugar: 1-2 tbsp
Vanilla Sugar: 1 tbsp (or replace it with sugar and vanilla extract)
Water: 1 cup, cold (or replace with sparkling water)
Lemon Juice: 1 tbsp (freshly squeezed)


Directions:

1. Cut strawberries into thin slices. Sprinkle over with 1 tbsp sugar and 1 tbsp vanilla sugar.

 2. Leave in the fridge for two hours until the juice starts to come out.

3. Process the strawberries with cold water and lemon juice in a blender.

4. Taste the blend and add more sugar if required.

Fast Cucumber Salad

1 cucumber sliced
3 Tablespoons of sugar
1/4 cup of fresh or bottled lemon juice
8 oz. of sour cream
1 tsp. of salt
1/2 tsp. dill

 Dissolve the sugar in the lemon juice. Add the sour cream, salt and dill. Mix it all with the cucumbers. Subbmitted by Alice

Comfort Chili

1 pound ground beef
1 onion, chopped
2 cloves garlic, chopped
salt and pepper
1 - 28 ounce can diced tomatoes
1 - 20 ounce can red kidney beans
1 teaspoon Worcestershire sauce
1 tablespoon chili powder


Sauté onions over medium heat in non-stick pan or in a touch of oil. Add ground beef and garlic and brown well. Add salt and pepper while beef is cooking.

Drain off any excess fat after frying meat. Add canned tomatoes, kidney beans and seasonings. Mix well, cover and cook for 1 hour over medium low heat. Adjust seasonings, plate and add shredded chedder cheese and a spoon of sour cream on top. Enjoy. Submitted by Wendi

 

Everybodies Fav Chocolate Chip Cookies

2-1/4 cups flour
1 teaspoon baking soda
1 teaspoon salt
1 cup butter, softened
3/4 cup white sugar
3/4 cup firmly packed brown sugar
1 teaspoon vanilla extract
2 eggs
2 cups semi-sweet chocolate chips
1 cup chopped nuts (optional)

Preheat oven to 375°.

In a small bowl, combine the flour, baking soda and salt. Set aside for a minute.
In a large bowl, combine butter, white sugar, brown sugar, and vanilla. Beat until the mixture is creamy. Beat in the eggs. Gradually add in the flour mixture. Stir in the chocolate chips and nuts.
Drop the cookie mixture by the tablespoonful on an ungreased cookie sheets. Bake for 9-11 minutes, until golden brown. This recipe makes about 5 dozen 2 1/4" cookies. Submitted by Jane

 

Fast Baked Ziti

8 oz. ziti
1 pound lean ground beef
1 small onion, chopped
2 cloves garlic, peeled and chopped
1 can 28 oz. crushed tomatoes, undrained
1 can 16 oz. tomato sauce
1 teaspoon. oregano
1 Cup. grated Mozzarella cheese
1/4 Cup. grated Parmesan cheese
2 Tablespoons dried parsley

Cook ziti in boiling, salted water according to package directions; drain. Lightly brown beef and onion in a saucepan. Pour off any excess fat. Add garlic, tomatoes with can liquid, tomato sauce and oregano. Simmer for 15 minutes. Preheat oven to 350ºF. Mix cooked ziti and sauce together in a 2-1/2-quart baking dish. Combine Mozzarella and Parmesan cheeses; sprinkle lightly over ziti mixture. Sprinkle with parsley. Bake for 25 minutes or until lightly browned and bubbly. Yield: 6 servings.
